Certification of Food Handlers. A System to Fulfil EEC Requirements

A system of certification is described which fulfils the requirements of legislation to be introduced by the Commission of the European Communities. Regulations will require annual medical examination and certification of food handlers employed by producers of poultry meat, red meat and meat products. This system should enable the task to be carried out easily and relatively quickly by means of controlled delegation to trained nursing staff under the supervision of a responsible medical officer.

The limited value of annual certification is discussed, together with the particular problems of hepatitis and the enteric fevers.
